Brakeman's was born across the street from the historic Colorado Springs depot — the same depot where freight crews clocked in for decades. We took inspiration from their tools, their typography, and their unspoken code: do the work right.
That code shows up in the food. Two 2oz wagyu patties smashed hard on a 500° griddle for those lacy, caramelized edges. Pickles fermented in-house. Sauces — including our secret 1942 — built from scratch every morning.
